Diet: Micro and Macros

Sunday’s are a food prep day for me. I do it for two reasons. One- I am trying to watch my weight. Two- I am really that busy and if I don’t I will live on junk food and take out for the next six days. Being a vegetarian, I always make sure I have some grilled or roasted veggies with a side- rice, potato, pasta, etc… Anyway, I am doing my thing when a neighbor friend comes over to drop something off. And she is that neighbor friend. The one that you secretly envy- beautiful, amazing body, smart, talented, gorgeous family and seems to has her shit together. She comes in and sits her perfectly perky ass down at my kitchen island and watches me cook. She then starts preaching to me that I am doing it all wrong. I need to be counting micros and macros and portioning things out. Really?? WTF are micros and macros? She made it sound like it was the end of the world. I have never been more confused and felt like what I was cooking was the worse thing ever. I guess this week I will be spending my free time reading about nutrition and learning what micros and macros are.

I try to keep my favorite grilling veggies on hand so I can cook them up in a quickly and have a delicious side dish to go with any meal. I love adding the leftovers to a big salad the next day. My favorites are summer squash, zucchini, onion, peppers, and mushrooms. Chop them up, drizzle with avocado oil or oil of your choice, sprinkle with salt, pepper, and herbs of your choice.
